Haven't used luan, but built 2 boats out of 1/4" oak ply (thin skin) this year. The only problem I had was getting the decks to curve (in the CLC type deck). But with a little patience they turned out fine and after a summer of paddling they are fine. So to answer your questin they will not sink straight to the bottom.
