Strip: Varethane (sp?) instead of varnish?

The local Revy has a gallon of exterior Varethane for $60. It was made by Felco(sp?). It is advertises as UV protection, and 'hard'.
Is this a reasonable cover for Epoxy on my kayak. Can I use it over the spar varnish I have on my Canoe.
What is the difference between this and varnish?
