I think it comes down to personal preference... you could probably even sew the stems on :) I used yellow glue for stripping and epoxy for the stems. Thickened epoxy has better gap filling properties than yellow glue; I had lots of little cracks and voids (and end grain) that I wanted the epoxy to soak into. Also some builders prefer not to glass the stem areas. Otherwise, I can't imagine it makes much difference.

I masked off the area surrounding the outer stem before installing it; that made it a lot easier to clean up.
