I just used the plain ol' carpenters glue on my outer stems. I figured, as you did, that it would be overkill to use epoxy when I'd be glassing over it with a double layer of 6-oz. You also avoid the possible (albeit rare) occurance of not mixing your epoxy correctly and having to re-do your stems. Mine came out fine.
