Should be fine for several years. Might even be better in a few years than they are now. The added storage time will permit them to equalize their moisture content, and if the strips are stored inside a heated building, where the humidity is low, they may lose a little more moisture and get a bit lighter. Don't expect to lose pounds of weight from your boat; an ounce or two is more likely.
I bundle my strips in groups of about a dozen and tie them loosely with twine. The effect of grouping is to protect the edges and reduce warping.
There may be a color change -- in fact there will probably be a color change.
Light can cause the outer layers of wood cells to decompose or oxidize. In red cedar this can give an attractive silvery appearance. Light sanding removes most of this oxidation, but leaves some silvery "highlights" in low areas of the grain. It can be a pretty effect, but applying the epoxy changes the tone. A little more sanding effort will remove all this oxidized wood and give a good bonding surface for glues and epoxy.
