Custom hand built ones, or manufactured ones? I've built 3 windsurfers from Clark foam blanks (I don't believe they are in business anymore). You order the blank in the basic shape of the board, including rocker and the curve in the bow. The blanks usually include two wood stringers. The shaping process is cut the basic profile of the board and then shape the board with a power hand planer (mess beyond belief!). After that, you fair it similar to fairing a cedar strip ... although I started with a Surform. With a smooth surface, glassing isn't much different than glassing a kayak.
