Hi Grant,

I'd guess you mean you can set Deviation, not declination. That is you can adjust the compass for the magnetic properties of the hull. That does not end up being very important according to David Burch in Kayak Navigation, because there are not many magnetic parts to a kayak.

For a lot more on this see p 77 and the area around it of Burch's most excellent book.

I will follow with interest the posts offered, though I'd guess my first choice would be a strap on Richie compass made for the kayak.
