I don't see the different deck heights having any significant effect on weathercocking. Most of the weather effect on the boat is created by the ends. The ends of the NH are pretty much the same regardless of the deck height near the middle of the boat.

The low-bow, high-back should be the easiest version to strip just because the relative height difference is the lowest.
