Let me forewarn you that the events that I am familiar with are quite a ways from Texas.

There is a page which highlights some of the events. It references the one hosted by Redfish Kayaks which typically occurs in the the third week of August in Washington state. And also the "Meet at the Beach" which is a smaller event but typically occurs the second week in June in Conneticut.

the one I don’t see in the link is the event which happens in New Hampshire. It occurred on Sept 13th this year. It is called the Newfound Rendezvous. Here is the link from this years event.

Considering the distances you will need to travel my suggestion is that you do a post, indicating more precisely where you live and ask individuals who have built boats that live near by if they could make themselves known and if you could visit them at their homes.
