Hey Kurt,
You didn't say which epoxy you're using, but it probably wouldn't make much difference. If your using MAS for example,their resin/slow hardener is not recommended at or below 50*F. However, you can use the resin with medium or fast hardener at 41*F (thats as low as their online "Epoxy Cure Schedule" goes.
I called and talked to some nice folks at MAS concerning the temperature and humidity and I was told that the temp would affect the strength of the cured epoxy, but the high humidity (it was raining nearly every day at the time)was no problem. Altho', as one already stated, "bringing a cold boat into a warm room"????? I have no clue.
But I was told to allow my boat to sit a couple of days in a warmer environment so the wood could warm if it had been sitting in temps below the temps stated on the curing schedule. So it looks like the hardener your using is going to play a role in your decision.
You may just want to call the manufacturer of the epoxy of your choice and explain your situation, and get their recommendation.
