I did the retrieval version of the kayak from the same chapter in Morris's book, but narrowed it down a bit so that it would fit my younger children. It was a lot of fun, and was a good boat to build for my first SOF project. I viewed it as part learning experience and part building project. The kids have paddled it on quiet flatwater, and have really enjoyed it. I guess that's a bit different purpose than what you probably have in mind, but it was fun, and I'd do it again if I could think of a good excuse.
