I did use only one layer of 6 oz glass about 3 inches wide on both my two s&g kayaks.Never bother attempting a scarf joint. In the end I sanded away all of the external layer to make it look right. I guess you could go with just one layer inside and the bending moment is similar to pure ply. The final glassing does most of the job anyway.
