Seeking: info on glue

I realize that most of my questions will be answered once I start building ... and after reading Nick's book. However, will someone make it clear for this old man -- I have read many messages about glue and epoxy when it comes to stripping. The glues mentioned have ranged from carpenters glue to something called CVA (I think) to Elmer's to ... And then, in a boat building magazine I see an ad for GORILLA GLUE. All I want is a fast acting glue that will do the job and not hold up the process. Is this one of those newbie questions that everyone else knows the answer to?

Actually, everybody uses some epoxy as a glue
