You didn't say what type of strongback you're using. In my mind, it does change your options - with an external strongback it makes sense to fair and glass the hull to provide extra strength before dismounting the forms from the strongback and rolling the boat over. Personally, I'd be prone to do the same with an internal strongback, based on the reasoning that John Caldeira gave.
