12 oz has no place in kayak building.

Doubling up is the way to go. 12 oz may be ok on a flat surface, but is too stiff to curve arround a hull.
I tried using that to strengthen the stem. 12 oz was hard to wet out, the fiber would not lay down and stick above the epoxy. I tried pushing it into the fillet, as soon as I turned my back, the cloth would lift off the fillet. It was a mess.

12 oz also has a much more bumpy surface ( thicker threads) which telegraph through the epoxy, requiring a lot more sanding to smooth it out.

You can cut you bias tape from glass cloth. Instead of scissors, try using a fibric cutting roller (fibric stores or art supply stores sell those rollers) with cardboard backing the cloth. Store bought tape is ok, but you spend more time to sand off the edges.
