I put a recess on my Cape Ann Expedition and did the coaming with cherry and walnut because I like the look of an all wood boat without carbon fibre accents. Worked out fine and I like the look. Although the coaming doesn't show up too well, you can see some pics of my boat on Vaclav's site. Go to kayak designs - Cape Ann Expedition and click on "I love the way she handles".
Good luck with your decision. I think you will like the look with a recess and a wood coaming.
