I just had much the same problem with my Night Heron (I'm a first time builder, too). I solved it at the point where the bend and the twist were most severe (in my case on the chine at the third form from the stern) by clamping a piece of wood on top of the strip and *parallel* to the form (*perpendicular* to the strip) so as to hold the strip tight against the form while the glue dried. I used a 12" bar clamp and stapled a cleat to the bottom of the form to keep the clamp from sliding. It was probably overkill, but I also ran a sleeping bag strap around the second form and used duct tape to hold the strips together between the forms.
This all happened last night and it looks great tonight.
Good luck with your boats.
