I wish you all the luck in the world. You have a daunting task ahead of you. I haven't yet built an SOF and if faced with the same problem I would go with stitch and glue. 5 days is certainly viable then with only the curing of the epoxy the time limiting factor...and the scraping, sanding..etc. I would also recommend singles over doubles since doubles seem to work well for only a few rare persons...such as very newlyweds, or siamese twins. Since you have already perused this site and found Tom Yost's amazing site, and I'm sure other fine examples I can't even point you in a better direction. Fabricating most, or all, parts with final assembly in the cafeteria is probably what you should be considering. I'm sure you will get lots of information from many fine sources.
