Acetone will leave some residue. I use lacquer thinner as it doesn’t leave any residue. I also use it to wipe off the sanded surfaces before applying epoxy. I sand between varnish coats with 400 or 600 grit paper than wipe off again with lacquer thinner. Just make sure that whatever you use has entirely evaporated before you apply the varnish.
