Hi Al-
Actually hand-planing it is easier than it sounds. Just plane the cove off until you've removed the cove edges. The edges will give you a visual reference on how you're doing. You'll need to put a slight bevel on the edges from the cockpit forward and you do that as you go...router won't help there.
