I like the looks of Cunningham's deck beam mortice method (although I haven't yet tried it). The mortices are all perpendicular to the gunwales, angled up at the requisite 17 degrees (or whatever you use). The tenons are then cut perpendicular to the angled end of the deck beam. The mortices can all be cut before bending the gunwales to shape, rather than disassembling after marking the deck beams.

It looks easy, and I think I'll try it on my next boat. My current project is drilled and dowelled rather than morticed, and I'm not completely satisfied with it, although it should be just fine once the skin is on and I don't have to look at it anymore. :-)
