Looks like a pretty good plan. I did something similar with mahogany blocks on my Pygmy Arctic Tern. My one recomendation is to use a harder wood than cedar, don't want you footbraces to fail at a critical moment.
I found the directions for the method I used on the Kayak Builders of Southern California site. This method has worked well for me, and I take the kayak out in the surf.
