Personally, I wouldn't alter the shape of the sheer. It is a prominent feature of the design and IMHO would look weird with a lump introduced into it.

You might get enough additional height without having to raise the sheer, by changing the shape of the deck (in cross section), making it rounder instead of pointy at the center. In other words, make it one continuous arc across the width of the boat, with most of its rise occurring near the sheer, instead of two shallow arcs meeting at a "point" along the center ridge. If you made this change without altering the centerline height, then the profile would remain unchanged, but the volume near the sheer increased.

I'm not sure I described that very well. A sketch would be easier, but I don't have a way of posting a sketch at the moment. Hopefully, you understand what I'm trying to say.
