Don't do anything to the sheer, boat has nice lines. Find another design with a rounded transition hull to deck rather than the hard sheer joint of an Endeavor. IMHO it would require more modification than it's worth. Can't be easy to raise the height at the sheer where you would need it without wrecking the lines or performance of the boat, there's already enough height at the center line. I'm 6-04 and have size 13 feet and paddle an Endeavor. I can wear booties and mukluks but no hard soled shoes or rubber boots.
What you can do that I think improves the boat dramatically is build a recessed cockpit. Use Nick's book for guidance.
