If assembly speed is an issue, you may want to look at making a double SOF boat.

I test paddled a pigmy double a while ago, and was impressed. It has a good balance between stability size.

If you go that route, you may want to get the triple instead of the double. you all can go in one boat for day trips, and still use it as a double for longer trips.
