One advantage of a recess is that the coaming as designed (on the Endeavour) comes to a point at the peak of the rear deck, which can be uncomfortable for some. The recess allows the back edge of the coaming to be level, completely eliminating the point.

Another advantage - if you are inclined to roll, the recess lowers the back edge of the coaming substantially.

Another advantage - with a prominent center peak like the Endeavour has, a recess lowers the front edge of the coaming, so you can keep the paddle lower with less risk of banging your knuckles while paddling.

Some people (me included) like the way it looks. That is merely a matter of personal taste, however.

A disadvantage - as you suggested, it does involve more work.

My coaming has been lowered by about 1 1/4" at the front (purely because of the recess) and about 1 7/8" at the back (partially because of the recess, and partially because I redrew the rear deck lines, lowering the peak by 5/8" BEFORE installing the recess)
