In both of those setups, the rudder is being forced to hold the boat on course, not just steer it, that's why all the froth and foam. Multi-hulls can be tricky to tack, but that rig would be VERY difficult since the force on the sail is so far aft of the force on the leeboard. You tack into the wind and everything is fine until you start to complete the turn in the opposite direction. As soon as the wind hits the sail, it makes the boat pivot into the wind because the lee board is so far forward, stalling the boat, since it hasn't developed any forward momentum.
