If you're just getting into kayaking, making an experimental first boat out of heavy galvanized tubing is probably not the best way to evaluate whether you like the sport. Have you done much kayak paddling? If not, why not just pick up a used plastic kayak for $100 - $200 and go paddling? Then, if you really like the activity, build a boat with a bit more budget that you'll really like. Hunt around for some scrap 6061 aluminum tubing for your stringers. Try the business-to-business yellow pages where you live for tubing suppliers. I wouldn't touch the galvanized tubing, whatever the price. Too heavy and too hard to work.
