I guess I was there about seven years ago. It was a great trip. It's a big scuba diving area. The water is beautiful. You can easily hop on water taxis, planes, taxi cabs to get anywhere in the country for cheap. Your greatest concern would be finding accommodations that have clean water to drink/shower in; especially down East. It is (or was) very primitive.
Everyone speaks English, everything is expensive over the phone/cheap if you buy it in person. Renting cars is expensive/taking taxis is cheap. Stay at one of the resorts. We stayed at a local "motel" one night and were not comfortable. I know Ted Moores (KayakCraft) works with one of the big resorts there Chaa Creek on an annual canoe race. ... what else? We actually found the Mayan ruins more interesting than the beach (the Mayan sites are not near the ocean). Of course we didn't have sea kayaks. Part of that had to do with the poor accommodations at Key Cauker. I would check with some of the local Diving guides for more info.
