I only have one boat (that I use) with adjustable pegs in it and it's only because I've been too lazy to replace them with a minicel foam block on the bulkhead. There's absolutely no comparison in comfort or simplicity; foam wins!

Linda's Rumour has 10" of foam in it, which not only prvides a comfortable foot rest, but also reduces the volume of the cockpit that can fill with water in a wet exit.
