I can't comment on the Pax 20 but I did build a Pax 18 last winter.It was my first boat I have built and was not difficult except for the front deck had a lot of curvature so was tricky to bend on to the sheer clamps but that won't bother you if you are stripping the decks.The boat is long,sleek and has a minimum of freeboard which will give you a wet ride in rough conditions and it doesn't have much reserve bouyancy so the front end will bury itself into the wave trough when surfing.It's a very hard tracking boat so I expect the 20 footer will be even harder to turn.I find it comfortable to paddle with adequate
footroom and it is very fast.I sometimes have informal races with several of my paddling friends when out and I can smoke them every time in the Pax but not in my other boats.I like the boat,it's fast ,comfortable,attractive but not a great rough water craft.You didn't mention your weight but make sure your big and strong enough to push a 20 foot hull,I'm 5'6" and 145 pounds so the 20 would be overkill for me.hope this helps.
