any boat you'll made will be too this or too that, & she would want another
"better" boat that is not too this & not too that.

that's the age.

about the stability - since you are paranoid, there will have to be floats on each side of the cockpit, at least at the beginning, and you can remove them
when you're less paranoid.

The thing with holding her interested, well, I see a problem here.
building any type of kayak requires patience, accuracy, bla bla bla, you know.
