I use plastic containers and usually only the bottom of the container is touching the ice. I haven't tried this under conditions of high humidity. The resin/hardener mixture gets thick when chilled but will thin out when allowed to rewarm. Water in mixture will turn it cloudy so it is easy to tell you have a problem. Biggest problem is to remember to wipe the water off the outside of the container before pouring resin. For small jobs that require multiple applications I'll put resin container in a plastic bag and put the whole thing in the frig. This probably wouldn't work if you have small kids at home.
