I am 6'3" and 230lbs so I built the Guillemot expedition single. I am happy with the extra length and volume for camping though you probably don't need it just for touring. The one thing I wish I had done was make the cockpit a few inches longer. I built the exact dimention that came with the plans but found that can't get my knees out without lifting my butt out first. On long paddles when I stop for a on water break I wish that I could pull my knees up to my chest to stretch without having to pull my butt out as well.

You may be ok but check the cockpit length before you put the coaming on.
