I use SPAR Varnish. I haven't had any problems with it so far. Mind you, I haven't really had a chance to keep a kayak in the water for longer than a couple of months. It does have a slight yellow hue to it so if you're gonna cover any artwork or paint beware. I think this is pretty common for varnish anyway.
