After re-thinking this, I've got an idea. ( Always a dangerous thing ! )

How about a folding SOF Canoe. It would be much easier to portage, carry more
gear that would also be easier to access. In addition the seat and seating
position(s) would provide much greater long term comfort vs kayak. You could
alternate between kayak and canoe paddles to provide some variety and rest.

All the above are probably why you don't see many kayaks in the Texas Water
Safari.

Still think an SOF would take a beating, but that would be part of the fun.
You could carry a spare skin or two for backup. You could make it from
larger/heavier wall tubing to improve durability. If all the tube sections were
the same length, you could take along a couple of spares. With a battery
powered jig saw and some HDPE, you could make replacement cross sections
(Okay, now I'm just kidding.)

In addition, you could make a PVC deck cover for when the conditions warrant,
such as the open water crossing at the end of the race.

I've got an old Jensen 327 Pro-Boat stripper that would convert nicely to a
multi-chine SOF. It's 18.5' LOA, same LWL, 327 - (27" wide at the 3" W/L)

Since it has very little sheer curve and no rocker, it would accept large
diameter gunwales and keel. With multi chines, you'd probably have to race
unlimited as I don't believe USCA Class or Standard class canoes allow concave
shapes.

My index finger is hovering near the CAD package start button. Just give me the word !

No matter what you paddle...Go for it !
