Hi Tom, these are my thoughts on it. You have two options: 1) build a female mold of your boat in two parts (hull and deck) and layup layers of carbon fiber (CF) in the mold until you reach the desired thickness. Then pop the boat out of the mold and epoxy the CF hull and deck together. Or 2) build a wooden boat and sheath it in CF.
The former method is what you would might see at a commercial production facility. The latter is what almost all of the builders here would do. The downside to method #1 is - you make a plug for your female mold out of wood, foam, another boat, etc and then you discard the plug... and then, after you make your boat, you either go into business or discard the mold. So it's a lot of extra work (and waste) for one boat. The upside to method #2 is you gain the properties of your composite material even though it is a fairly thin layer over wood.
There are lots of arguments for all-composite construction over all-wood construction (see back issues of Wooden Boat magazine) and vice versa. We don't really see those arguments here; what you see here is builders utilizing the best of all available materials/methods. For one-off construction, wood core/composite construction is a great way to go.
... that's how I would do it; build a stripper out of 3/16" cedar and then sheath it in one layer of 5.7oz CF satin weave or twill and one layer of 3.2oz satin weave fiberglass inside and out.
