Just an observation that a lot of folks seek a kayak with strong tracking characteristics in the beginning for just the reason you give but as skills develop often times a more maneuverable boat is desired as the ability to maintain a course with a responsive kayak is developed. In other words you really can't make a stiff tracking boat maneuverable but you can make a responsive boat hold a course. The question is whether that boat is responsive and weathercocks to a significant degree or responsive and somewhat neutral. There's a range of possibilities.
You may find that at 190lbs the average big kayak will have LOTS of carrying capacity ,, if you aren't carrying lots of stuff you may find the boat kind of big overtime or in high winds.
High top speed potentials (long waterline) are rarely used compared to cruising speed efficiency for average efforts.
