Seeking: beam -stability

Hi Rick from Canada I want to build a guilmont expedition ,but would like to make the beam 221/2 or 23 inches. I,am nervous about the stability of a 21" . I now paddle a telkwa with 24" beam . I like to fish and carry gear for 2 to 3 weeks .Are there any suggestions.
