I don't know anything about Waters Dancing kayaks but I can tell you from my experience with Pygmy that their information on the handling characteristics of the Artic Tern 14 is right on. If you get the Osprey wait for it to come with the recessed rear coming. It allows for a better lay back with rolls and bracing.
