The only water based polyurethane I know that will work is Varathane, made by Fletco (or is that Flecto?) I used it on my SOF and it is holding up great, about to enter its third season without any problems. The only difference is my SOF used a polyester, not nylon, skin, but that shouldn't matter. Just make sure to get the exterior grade - costs about twice as much as the interior stuff. I couldn't find it at the local Home Depot or Lowes, had to buy it online. Can get it directly from the manufacturer or one of several paint sites - think I got it from cornerhardware.com. This stuff is durable, easy to apply, and non-toxic. And is really easy to repair. And if you want the boat a specific color, just mix in a small amount of acrylic paint - less than 10% paint.
