Elliot - We both seem to be at about the same stage on our boats. I finished the basic deck sewing last night and should have my cockpit combing sewn on tonight.

I have chosen the Flecto Diamond Outdoor Finish (Water-Based) refered to in the link below. I am using the Dyson ballistic nylon and am planning on applying it this weekend. Many of the stores here had other Flecto Diamond Varathanes, but I found mine at the local Home Depot. I think it was $40-45 a gallon. It dries very fast, dry to touch in less than a half hour. Good luck on tracking some down...

Others have expressed concerns that you must follow all the label guidelines so be sure it is warm and dry when you apply it, the lower the humidity the better. Since I live in the rainy PNW I am planning on finishing mine in a spare room. I will have the room heated and make sure the boat and frame are warm and dry before I start. Rick Allnutt? used a similar finish on his SOF Canoe and was very careful about hitting the recoat time windows, not too short or too long between coats.
