This is something I have done also. I camp on rivertrips out of my kayak. I use a low tech "gravity feed" to fill and empty my kayak...I have duffels that are the right shape, along with a pointy dry bag for the tip. I just push the first bag in with the second and so on until full. When I want my stuff, I just tip the boat up, and it slides out. I wouldnt worry about entrapment with ropes, but some people seem to.
As far as a seat that tips down: I havent completed mine yet, but I just plan to use closed cell foam that velcros to the bilge. That way not only can I remove it for access, but you can use the velcro to trim the boat and balance the forward and aft weight distribution.
