I paddled a Current Designs Libra XT at the Alder Creek Paddlefest in Vancouver, WA this last weekend. It is a "convertable triple" that has a "jump seat" between the cockpits. When not used for kids, it can be used for gear and is covered by a huge 26"x 21 3/4" hatch. Much like the "meta-hatch" you are describing.
