My vote would be to go with the get-used-to-it option.
When I first paddled my Cunningham S&G last summer, my first thought was that I'm never going to be able to keep it right side up. Compared to what I had been paddling, it was really tippy. The trick that did the most to get me used to its tippiness was a suggestion that came from someone at R2K2. It was suggested that I paddle it for a while with the seat raised, so, I paddled it for a week or two with an extra couple of inches of foam under the seat. That did some dramatic things to further reduce its stability, but a few white knuckle trips out on the bay taught me bunches about the finer points of my boats stability. When I went back to the normal seat height the boat was wonderfully stable (especially compared to my initial perception of its stability).
So, good luck with your new boat, and my bet is that you will get used to it more quickly than you think you might.
