Shawn,

I would put on epoxy as a sealer, and then a good varnish on top. On softwoods especially, oil finishes tend to discolor, pick up dirt and generally look pretty bad after a few years. Besides, they are much 'softer' finishes to begin with, and the 'dents' and dings seem to accumulate faster.

Unless it's a 'traditionally' constructed boat, I coat all wood surfaces with epoxy before finishing with varnish, or even paint. There's less maintenance required over the long haul, and when it's needed it's easier to do.
