To be exact on hatch placement: whatever works!
I tend to like to have room between the hatch and bulkhead for a drybag...if it's too close to the bulkhead, you have to remove every drybag to get at one closer to the ends...if you have that space, you may be able to leave one or two bags in to reach an end bag.
If you install a day hatch, the rear hatch could be pretty close to the rearmost bulkhead.
If you install too close to the ends, the hatches get necessarily smaller.
Any plywood works, especially if you glass it. There are some beautiful 5-ply birch underlayment plywoods available. Check with a commercial floor coverings supplier and see if they have a line on "Luna" ply. If they have a contractor or installer putting it down at the time, ask if you can pilfer a couple of scraps out of the dumpster at the jobsite.
