Vacuum bagging is the industry standard for veneer application.

For less hassle, I like "poor man's vacuum bagging". Cover with saran, then a layer of thick, open-cell foam. Then, a piece of plywood. Clamp the plywood down tightly. If you're going over your deck, lashing the plywood down with some stout cord would give good pressure.
