I would never want to still be applying epoxy as it starts to kick. I'm in the small batches, more coats camp. Seems to let me I get the weave filled more evenly with no runs, no more than is needed and doesn't need much sanding. I think it takes less time in the whole process and probably less weight. I would only try high viscosity for very thick coating of flat pieces I could coat while level. You can apply more to spots where it doesn't cover but the only way to get it off where it's too thick or sags is more elbow grease. You should get their manual, very good info.
