It can and has been done.
The latest design that I saw was done on the Blue Heron Kayak Foundry design program that Ross Leidy has written. The canoe was designed and built by Gary Hochgraf. I have provided a link to his site and a pic of the boat below. It's a nice looking craft and Jim seems quite pleased with it.
